So, I'm panicking slightly because I haven't been cooking!! Yes, I need to get myself into the kitchen and conjure up some recipes so I can keep this section of the blog going... But between feeling immensely lazy and finding an angel of a cook to hold the fort in the kitchen, I just haven't been going in there enough... We're safe for now and the next week (yes, I did cook some stuff that I haven't publicly showed off yet).
For the recipe section today, I'm going to share yet another Easy Peasy recipe (which can be made Vegetarian or Non Vegetarian) as you please... I am a Spinach Lover and when my Bloggy Friend Loulou did a post on Spinach some weeks back, I started getting this itch to make something Spinach, and this is what I got around to:
Ingredients:
Chicken - 1/2 KG Small Pieces (Boneless or Otherwise, I prefer Boneless)
Spinach - 1 KG
Potato - 1 Large (Jacket Potato Sized perhaps) Diced
Onions - 2 Large
Garlic Paste - 1 Tablespoon FULL
Green Chilies - 3 Finely Chopped
Cloves - 4
Cinnamon Sticks - 1
Bay Leaves - 2
Yougurt - 1/2 a Cup
Oil - 3 tablespoons
Salt to Taste
Recipe:
Chop the Spinach and boil it only till it loses its Crunch
Put Oil in a pan and fry Clove, Cinnamon and Bay Leaves
Add onions and continue frying till Onions turn pink
Add Garlic paste and Chopped Green Chilies
Finally add the boiled Spinach to the mix and continue frying and stirring for a few minutes...
Now remove the mix from the fire and use a blender to make a paste of it
Return the paste to the pan and add the Yougurt
Add the Chicken and Diced Potato
Turn the flame low and cover the lid on the pan
Continue Cooking for 20-30 minutes (or till the chicken is cooked and potatoes are soft)
Serve with Boiled Rice, Roti (Pakistani Flat Bread) OR Paste if you're feeling Creative!
PS: Yes, that is a dollop of butter on top hehe I couldn't resist it but you don't have to put it :))
